This terroir is located east of Limoux and is characterized by a warm climate tempered by winds from the sea. In this terroir, the first grapes are harvested every year. In Saint Polycarpe, discover the old 10th-century fortified abbey church surrounded by a series of private buildings and a medieval aqueduct. Take a break at the Benedictine Abbey of Saint Hilaire, located in the heart of the village. The Gothic cloister is exceptionally well preserved. The Romanesque church houses a jewel of Romanesque sculpture, the sarcophagus of Saint Sernin by Maitre de Cabestany. It was here, in 1531, that the monks invented the first sparkling wine in history, Blanquette de Limoux.
